1-1/2 cups sugar
1/2 cup butter, room temperature
1 tsp vanilla
2 eggs
2-3/4 cup flour
1 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp salt
2 Tbsp sugar
2 tsp cinnamon
- Preheat oven to 400F.
- In a large bowl, beat together the butter and sugar until light and fluffy. Beat in vanilla and eggs. Add flour, cream of tartar, baking soda, and salt, and mix until a dough is formed (might have to get handsy and knead it like a bread near the end–this dough gets thick!).
- On a small plate, combine the 2 Tbsp sugar and the cinnamon and mix together. Shape the dough into small balls (3/4″ to 1″ diameter) and roll in cinnamon-sugar mixture. Place 2 inches apart on a parchment lined baking tray.
- Bake for 8 to 10 minutes. Immediately remove to wire racks to cool.
