1-1/2 cups flour
1/4 tsp salt
1/4 tsp baking powder
1/8 tsp baking soda
1/2 cup butter, room temperature
1 cup sugar
1 tsp vanilla extract
1 egg
1-1/2 Tbsp lemon juice
zest from however many lemons it took to achieve that juice
1/6 cup powdered sugar
- In a large bowl, beat the butter and sugar together until light and fluffy. Beat in vanilla, egg, lemon juice, and lemon zest. Add flour, salt, baking powder, and baking soda and mix until combined. Cover bowl and chill for at least 1 hour. If chilling longer than 1 hour, allow to sit at room temperature for 15 minutes before rolling into balls.
- Preheat oven to 350F.
- Pour powdered sugar onto small playte. Form dough into small balls (around 3/4″ to 1″ diameter). Roll ball in powdered sugar and place on parchment-lined baking sheet, abut 2 inches apart.
- Bake cookies for 13-14 minutes or until cookies look mostly matte (not wet or shiny). Remove from oven and cool on baking sheer for 3 minutes before transferring to wire racks to cool completely
