1/2 cup butter, room temperature
1-1/3 cups sugar
2 eggs
1 tsp orange extract
1-3/4 cups flour
1 cup old-fashioned rolled oats
1-1/2 tsp baking soda
1/2 tsp salt
1 cup sweetened dried cranberries
2/3 cup white chocolate chips
- Preheat oven to 350F.
- In a large bowl, beat sugar and butter until light and fluffy. Add eggs and orange extract and beat until well blended. Stir in flour, oats, baking soda, and salt, and mix well. Stir in cranberries and white chocolate chips.
- Roll dough into small balls by hand, around 3/4″ to 1″ in diameter, and place on parchment lined baking sheets about 2 inches apart. Bake for 9 to 11 minutes, or until light golden brown. Cool for 1 minute on tray, then remove and place on wire rack until completely cooled.
