1-1/2 cups sugar
1/2 cup butter, room temperature
1 tsp vanilla
2 eggs
2-1/4 cup flour
1/2 cup unsweetened cocoa powder
1 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp salt
2 Tbsp sugar
2 tsp cinnamon
- Preheat oven to 400F.
- In a large bowl, beat together the butter and sugar until light and fluffy. Beat in vanilla and eggs. Add flour, cocoa powder, cream of tartar, baking soda, and salt, and mix until a dough is formed (might have to get handsy and knead it like a bread near the end–this dough gets thick!).
- On a small plate, combine the 2 Tbsp sugar and the cinnamon and mix together. Shape the dough into small balls (3/4″ to 1″ diameter) and roll in cinnamon-sugar mixture. Place 2 inches apart on a parchment lined baking tray.
- Bake for 8 to 10 minutes. Immediately remove to wire racks to cool.
